**10points** how do i make a quick and Easy Potato Salad?
we are having family over for dinner tonight and my husband wants me to make a potato salad. i have never made one before and all the Recipe‘s i have found are really complex, does anyone have any ideas of how to make it easy? 10 points for best answer! thanks
I have super-quick recipe that I make when I want a tasty side in less than 15 minutes total.
I take 6 large redskin or Yukon Gold potatoes (or 8 medium, 12 small), pierce with a fork and microwave until soft. (usually around 6-8 minutes) Allow to cool for a few minutes so you don’t burn your hands when cutting them. Slice into small 1/2″ chunks. In a large mixing bowl take 1/2 cup of miracle whip or Mayo and 1/2 cup sour cream and blend. Add 1 teaspoon of dried dill, 1 teaspoon of sugar and 1/2 cup finely chopped celery. Gently fold in the sliced cooked potatoes. This actually tastes great warm- but is equally as delicious if you keep it in the fridge to get cold.
